Celery, Apple, and Fennel Slaw

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • tablespoons apple cider vinegar
  • tablespoons fresh tarragon
  • 2 teaspoons fresh lemon juice
  • ¼ teaspoon sugar
  • 3 stalks celery
  • 2 bulbs fennel
  • 1 whole apple
  • to taste salt and pepper
