Mirliton Relish
A fresh and zesty relish made with diced chayote squash, colorful bell peppers, and onions, dressed with vinegar and hot sauce. Perfect as a condiment or side dish.

Ingredients
- •3½ pounds chayote squash
- •1½ cups red onion
- •1 cup red bell pepper
- •1 cup green bell pepper
- •1 cup green onions
- •6 tablespoons distilled white vinegar
- •2 teaspoons hot pepper sauce
Cooking Instructions

Combine all ingredients in large bowl; toss to blend. Season generously with salt and pepper. Cover and chill at least 2 hours, tossing occasionally. (Can be prepared 8 hours ahead. Keep refrigerated.)
