  • cups cooked barley
  • 1 cup bean sprouts
  • cup Cotija cheese
  • ¼ cup sliced almonds
  • ¼ teaspoon kosher salt
  • 1 small avocado
  • 1 serving Lemony Yogurt Sauce
  • 1 pinch Flaky salt
  • 1 pinch black pepper
