Summer Anchovy Salad

Ingredients

  • 2 medium Tomatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Vinegar
  • 2 whole Hard-boiled eggs
  • 1 tablespoon Capers
  • 4 fillets White anchovy fillets
  • 2 tablespoons Flat-leaf parsley

Cooking Instructions

    Cut tomatoes into fat wedges. Drizzle with olive oil and a splash of vinegar. Top with crumbled hard-boiled eggs and capers, then drape white anchovy fillets over. Top with some chopped flat-leaf parsley.
