Wee Gazpacho
A refreshing cold Spanish soup made with fresh vegetables including ripe tomatoes, cucumber, celery, and bell peppers, seasoned with garlic and vinegar. Perfect for warm days and kid-friendly.

Ingredients
- •4 whole ripe tomatoes
- •1 clove large garlic clove
- •1 whole cucumber, peeled, seeded and chopped
- •2 stalks celery stalks, chopped
- •½ whole red or maui onion, chopped
- •½ whole bell pepper, red, yellow or orange
- •2 tablespoons red wine or balsamic vinegar
- •1 teaspoon lemon juice
- •1 tablespoon olive oil
- •1 teaspoon salt

Place all the ingredients in a food processor and puree until smooth (you want tiny pieces of vegetables to remain, but small enough for little ones to swallow).
