Wee Gazpacho

A refreshing cold Spanish soup made with fresh vegetables including ripe tomatoes, cucumber, celery, and bell peppers, seasoned with garlic and vinegar. Perfect for warm days and kid-friendly.

Ingredients

  • 4 whole ripe tomatoes
  • 1 clove large garlic clove
  • 1 whole cucumber, peeled, seeded and chopped
  • 2 stalks celery stalks, chopped
  • ½ whole red or maui onion, chopped
  • ½ whole bell pepper, red, yellow or orange
  • 2 tablespoons red wine or balsamic vinegar
  • 1 teaspoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon salt

Cooking Instructions

    Place all the ingredients in a food processor and puree until smooth (you want tiny pieces of vegetables to remain, but small enough for little ones to swallow).
