Celery on Celery Salad

A fresh and crisp salad featuring both celery root and celery stalks, dressed with a bright lemon-olive oil vinaigrette and accented with capers and fresh parsley.

Ingredients

  • cup olive oil
  • 1 teaspoon finely grated lemon zest
  • 3 tablespoons fresh lemon juice
  • to taste Kosher salt, freshly ground pepper
  • ½ cup chopped fresh parsley
  • ¼ cup capers
  • ½ medium celery root
  • 5 stalks celery stalks
  • thinly sliced into long ribbons on a mandoline

Cooking Instructions
