Clementine Jicama Salad
A refreshing Mexican-inspired salad combining sweet clementines with crisp jicama, red onion, and cilantro, dressed in a lime-garlic vinaigrette and topped with queso fresco and pepitas.

Ingredients
- •½ teaspoon chopped garlic
- •¼ cup fresh lime juice
- •6 tablespoons olive oil
- •½ teaspoon sugar
- •8 whole clementines
- •1 pound jicama
- •1 whole red onion
- •¾ cup cilantro sprigs
- •½ cup queso fresco
- •⅓ cup pumpkin seeds
- •toasted
Cooking Instructions

Mince and mash garlic to a paste with 1/2 teaspoon salt, then whisk together with lime juice, oil, sugar, and 1/2 teaspoon pepper in a large bowl.
