Sautéed Zucchini

A quick Korean-inspired side dish of crisp-tender zucchini matchsticks stir-fried in toasted sesame oil and seasoned with spicy gochugaru pepper powder.

Ingredients

  • 1 medium medium zucchini
  • 2 tablespoons toasted sesame oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • ½ teaspoon gochugaru (coarse Korean red pepper powder)

    Cut 1 medium zucchini into matchstick-size pieces. Heat 2 tablespoons toasted sesame oil in a large skillet, preferably nonstick, over medium heat. Add zucchini; cook, stirring occasionally, until just tender, 3-4 minutes. Season with kosher salt, freshly ground black pepper, and gochugaru (coarse Korean red pepper powder).
