- •3 whole Kirby cucumbers
- •2 heads Boston lettuce
- •1 heart romaine lettuce
- •1½ cups mint leaves
- •¼ cup extra-virgin olive oil
- •½ teaspoon fine sea salt
- •2 tablespoons red-wine vinegar
Cooking Instructions

Halve carrots crosswise, then shave into wide ribbons using a vegetable peeler. Toss with cucumbers, lettuces, mint, and oil in a large bowl.
