Minted Green Salad

A fresh and crisp garden salad featuring ribbons of carrots, cucumbers, and two types of lettuce, brightened with fresh mint leaves and dressed in a simple red wine vinegar and olive oil vinaigrette.

Ingredients

  • 2 whole carrots
  • 3 whole Kirby cucumbers
  • 2 heads Boston lettuce
  • 1 heart romaine lettuce
  • cups mint leaves
  • ¼ cup extra-virgin olive oil
  • ½ teaspoon fine sea salt
  • 2 tablespoons red-wine vinegar

Cooking Instructions

    Halve carrots crosswise, then shave into wide ribbons using a vegetable peeler. Toss with cucumbers, lettuces, mint, and oil in a large bowl.
