Green Beans with Lemon and Pine Nuts

A bright and flavorful side dish combining crisp-tender green beans with toasted pine nuts, fresh parsley, and lemon zest, all tossed in extra-virgin olive oil.

Ingredients

  • •1½ lb green beans
  • •¼ cup pine nuts
  • •2 tablespoons parsley
  • •1½ teaspoons lemon zest
  • •4 teaspoons extra-virgin olive oil

Cooking Instructions

    Cook beans in a 4-quart saucepan of boiling salted water until just tender, about 5 minutes, then drain well in a colander. Transfer to a bowl and toss with nuts, parsley, zest, oil, and salt and pepper to taste.
