Spiced and Sour Mushroom Soup (Tom Yam Hed)
A fragrant Thai-inspired mushroom soup featuring a perfect balance of hot, sour, and umami flavors. Made with two types of mushrooms, aromatic herbs, and seasoned with miso paste and lime juice.

- •600 ml vegetable stock
- •3 medium shallots
- •3 tbsp galangal
- •3 tbsp lemongrass
- •3 pieces kaffir lime leaves
- •90 g oyster mushrooms
- •90 g straw mushrooms
- •60 g cherry tomatoes
- •4 tbsp miso paste
- •3 tbsp lime juice
- •1 tbsp apple concentrate or honey
Cooking Instructions

In a saucepan, bring vegetable stock, shallots, galangal, lemongrass, kaffir lime leaves and chiles to a boil. Continue to boil for 4-5 minutes. Add oyster and straw mushrooms and cherry tomatoes. Once cooked remove from heat and season with miso paste, lime juice and apple concentrate.
