Puerto Rican Coconut Eggnog (Coquito)

- •12 ounce evaporated milk
- •2 large egg yolks
- •15 ounce unsweetened coconut milk
- •14 ounce sweetened condensed milk
- •1 cup white rum
- •¼ teaspoon ground cinnamon
- •1 pinch salt
Cooking Instructions

Beat together the evaporated milk and egg yolks in a medium bowl. Strain into a 3-quart pot and simmer over medium heat until slightly thickened, about 5 minutes. Remove from the heat and let cool.
