Marinated Feta With Roasted Lemon

A Mediterranean-inspired dish of creamy feta cheese marinated with roasted lemon slices, aromatic chiles, and bay leaves in olive oil. Perfect as an appetizer or addition to a cheese board.

Ingredients

  • 1 whole lemon
  • 2 tablespoons olive oil
  • 8 ounces feta
  • 2 whole dried chiles de árbol
  • 2 whole bay leaves
  • 2 tablespoons lemon juice
  • 1 to taste black pepper

Cooking Instructions

    Preheat oven to 400°F. Toss lemon slices and 2 Tbsp. oil on a rimmed baking sheet; roast until caramelized and lightly charred in a few spots, 10-12 minutes; let cool.

    Combine lemon slices, feta, chiles, bay leaves, lemon juice, and remaining 1/2 cup oil in a small dish; season with pepper. Cover; chill 12 hours.
