Treme (Mock) Turtle Soup
A rich and hearty New Orleans-style mock turtle soup made with ground sirloin, vegetables, and aromatic herbs in a flavorful broth. This classic soup is finished with hard-boiled eggs, sherry, and fresh lemon for an authentic taste.

- •6 stalks celery
- •2 cloves garlic
- •1 cup onion
- •¾ cup butter
- •1 can tomato puree
- •2 cans chicken broth
- •2 cans beef broth
- •½ cup flour
- •½ cup Worcestershire sauce
- •1 cup ketchup
- •1 tsp hot sauce
- •2 leaves bay leaves
- •1½ tsp thyme
- •to taste salt and pepper
- •1½ cups lemon juice
- •¼ cup flat-leaf parsley
- •6 whole hard-boiled eggs
- •6 slices lemon
- •1 cup sherry

Cooking Instructions

On the stovetop, sauté the sirloin, celery, garlic, and onion in butter until meat is brown and veggies are translucent. Add to the slow cooker.

Add tomato puree, chicken broth, beef broth, flour mixture, Worcestershire sauce, ketchup, hot sauce, bay leaves, thyme, salt, and pepper to the slow cooker. Stir.

Add lemon juice, parsley, and eggs 30 minutes before serving.
