Crunchy Crab Salad

A fresh and vibrant salad combining sweet crabmeat with crisp apple, avocado, and grapefruit, dressed in a zesty ginger-citrus vinaigrette. Perfect for a light yet satisfying meal.

Ingredients

  • 200 g fresh crabmeat
  • 1 whole avocado
  • 2 sticks celery
  • 1 whole pink grapefruit
  • 1 bunch radishes
  • 1 whole Granny Smith apple
  • 1 tsp fresh root ginger
  • 1 handful fresh coriander leaves
  • ½ handful fresh mint leaves
  • 2 tbsp pink grapefruit juice
  • 1 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp fresh ginger juice
  • 2 tbsp extra virgin olive oil
  • 1 tsp coriander seeds
  • ground coriander
  • 1 pinch black pepper

Cooking Instructions

    To make the dressing, put the ginger and citrus juices into a bowl, add the salt and stir until dissolved. Add the ground coriander and pepper, then while whisking, slowly pour in the olive oil until combined.
