Ingredients
- •200 g fresh crabmeat
- •1 whole avocado
- •2 sticks celery
- •1 whole pink grapefruit
- •1 bunch radishes
- •1 whole Granny Smith apple
- •1 tsp fresh root ginger
- •1 handful fresh coriander leaves
- •½ handful fresh mint leaves
- •2 tbsp pink grapefruit juice
- •1 tbsp lemon juice
- •1 tsp salt
- •1 tsp fresh ginger juice
- •2 tbsp extra virgin olive oil
- •1 tsp coriander seeds
- •ground coriander
- •1 pinch black pepper

To make the dressing, put the ginger and citrus juices into a bowl, add the salt and stir until dissolved. Add the ground coriander and pepper, then while whisking, slowly pour in the olive oil until combined.
