Ingredients

  • 1 large cucumber
  • 2 whole potatoes
  • 3 whole bell peppers
  • cup pitted olives
  • 1 pinch salt
  • 3 cloves garlic
  • 3 whole scallions
  • 4 tablespoons olive oil
  • 1 tablespoon white wine vinegar
  • ½ whole lemon
  • 1 tablespoon mint leaves
  • 1 tablespoon cilantro leaves
