My Favorite Chicken Salad

A Mediterranean-inspired chicken salad featuring tender roasted chicken, mixed with olives, capers, and fresh vegetables, dressed in a lemony olive oil and oregano vinaigrette.

Ingredients

  • 1 whole roasted chicken
  • ½ cup extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1 lemon lemon juice
  • ½ cup imported black olives
  • 2 tablespoons drained tiny capers
  • 8 whole grape tomatoes
  • ¼ pound thin green beans
  • 1 head Romaine lettuce leaves
  • 2 tablespoons chopped parsley

    1. Remove the skin from the chicken and tear the meat into large pieces. Place in a bowl. Combine with the oil, oregano, and lemon juice. Let stand for 1 hour.
