- •1 can black beans
- •1½ cups fresh corn kernels
- •1 cup cherry tomatoes
- •1 cup bell peppers
- •½ cup red onion
- •3 cups arugula
- •½ cup fresh mint
- •1 tablespoon garlic
- •½ cup tomato juice
- •2 tablespoon lemon juice
