Herby Corn Salad

A fresh and vibrant salad featuring sweet corn kernels tossed with aromatic herbs, shallots, and a light olive oil-sherry vinegar dressing. Perfect as a summer side dish.

Ingredients

  • ¼ cup olive oil
  • 2 tablespoons Sherry vinegar
  • 1 teaspoon Salt
  • ¼ teaspoon Freshly ground black pepper
  • 1 whole shallot
  • ½ cup fresh herbs
  • 3 cups corn kernels

Cooking Instructions

    Whisk 1/4 cup olive oil and 2 tablespoons Sherry vinegar in a large bowl; season with salt and pepper. Add 1 thinly sliced small shallot and 1/2 cup torn fresh herbs (such as dill, mint, and/or chives).
