Amarillo Ceviche Mixto

A vibrant Peruvian-style seafood ceviche featuring a mix of shrimp, octopus, and scallops in a citrus-based marinade with aji amarillo paste and fresh vegetables. The dish combines traditional ceviche ingredients with the distinctive yellow color from turmeric and aji amarillo.

Ingredients

  • cup freshly squeezed lime juice
  • cup freshly squeezed lemon juice
  • 1 tablespoon aji amarillo paste
  • 1 tablespoon ground turmeric
  • ¼ cup clam juice
  • 1 tablespoon grated fresh ginger
  • teaspoon salt
  • ½ pound shrimp
  • ½ pound octopus
  • ½ pound bay scallops
  • 1 whole yellow tomato
  • 1 whole yellow bell pepper
  • 1 tablespoon fresh chives
  • 2 tablespoons green onions
  • 1 tablespoon fresh cilantro

Cooking Instructions

    Place all the sauce ingredients in a blender or food processor and purée until smooth. In a nonreactive bowl, mix together the sauce, shrimp, octopus, scallops, tomato, bell pepper, chives, and green onions. Cover and refrigerate for 1 hour. Before serving, garnish with the chopped cilantro.
