Vegan Mayonnaise

A creamy, dairy-free mayonnaise made with tofu and cashews as the base. This plant-based alternative to traditional mayonnaise is perfect for sandwiches and salads.

Ingredients

  • 7 ounces extra-firm tofu
  • ¼ cup raw cashews
  • 1 tablespoon lemon juice
  • 1 tablespoon raw sugar
  • teaspoons brown or Dijon mustard
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon sea salt
  • 6 tablespoons canola oil

Cooking Instructions

    Place the tofu, cashews, lemon juice, sugar, mustard, vinegar, and salt in a blender or food processor and process until smooth.
