Avocado Tomato Salsa

A fresh and vibrant Mexican-style salsa combining ripe tomatoes, creamy avocados, and zesty lime juice with jalapeños, garlic, and herbs. Perfect as a dip or topping for various dishes.

Ingredients

  • ¾ pound ripe tomatoes, rinsed and drained, stems removed
  • 2 whole avocados, peeled, pit removed, cut into 1/4-inch dice
  • tablespoons lime juice
  • 1 whole jalapeno chile, cored and seeded
  • 1 tablespoon minced garlic
  • 1 cup minced scallion greens
  • 2 tablespoons fruity extra-virgin olive oil
  • ½ cup fresh cilantro leaves, chopped coarsely
  • 1 teaspoon salt

Cooking Instructions

    Cut the tomatoes in half and scoop out the seeds. Cut into 1/2-inch dice and put in a serving bowl.
