Tomato-Watermelon Soup

A refreshing cold soup that combines sweet watermelon with ripe tomatoes, garnished with feta, olives and fresh mint. Perfect for hot summer days.

Ingredients

  • 2 cups watermelon
  • 2 whole tomatoes
  • 2 tablespoons unsalted almonds
  • ½ whole shallot
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1 teaspoon olive oil
  • 2 tablespoons feta cheese
  • 1 tablespoon black olives
  • 2 teaspoons mint
