Pimento Corn Muffins

Ingredients

- •1 cup yellow cornmeal
- •1 cup all-purpose flour
- •2½ teaspoons baking powder
- •½ teaspoon baking soda
- •½ teaspoon salt
- •2 large eggs
- •1¼ cups buttermilk
- •⅓ cup pimentos
- •1 pan muffin pan

Put oven rack in middle position and preheat oven to 425°F. Generously butter muffin cups.
