Endive, Apple, and Celery Salad with Smoked Almonds and Cheddar

Ingredients

  • ¼ cup Champagne or white wine vinegar
  • 2 whole Honeycrisp apples
  • 2 teaspoons whole-grain Dijon mustard
  • ¼ teaspoon kosher salt
  • cup extra-virgin olive oil
  • 8 medium endives
  • 1 head celery
  • ½ pound aged sharp cheddar
  • ¾ cup salted smoked almonds
  • to taste flaky sea salt

  • ½ cup chives
