Endive, Apple, and Celery Salad with Smoked Almonds and Cheddar

- •2 whole Honeycrisp apples
- •2 teaspoons whole-grain Dijon mustard

- •⅓ cup extra-virgin olive oil
- •8 medium endives
- •1 head celery
- •½ pound aged sharp cheddar
- •¾ cup salted smoked almonds
- •to taste flaky sea salt

- •½ cup chives
