Chicken and Rice Meatballs With Hummus

Flavorful middle eastern-inspired meatballs made with ground chicken, rice, and aromatic spices, served over creamy hummus with a fresh herb and pickle salad.

Ingredients

  • 6 whole scallions
  • 2 cloves garlic
  • 1 piece ginger
  • 1 lb ground chicken
  • cups cooked white rice
  • ¼ cup extra-virgin olive oil
  • 2 tsp spice blend
  • 1 tsp kosher salt
  • 1 whole white onion
  • 4 whole dill pickles
  • 2 whole Persian cucumbers
  • 2 cups parsley
  • 1 Tbsp lemon juice
  • 1 serving hummus and lemon wedges

Cooking Instructions

    Preheat oven to 425°F. Gently mix scallions, garlic, ginger, chicken, rice, oil, hawaij, and 1 tsp. Diamond Crystal or 1/2 tsp. Morton kosher salt in a medium bowl (don't overwork). Form mixture into 12 balls. Place on a rimmed baking sheet and bake until lightly browned and cooked through, about 15 minutes.

    Toss onion, pickles, cucumbers, parsley, and lemon juice in a medium bowl to combine; season salad with salt.
