Roasted Orange Molasses Sweet Potatoes

Ingredients

  • 2 tablespoons unsalted butter
  • 1 teaspoon orange zest
  • cups orange juice
  • 2 tablespoons molasses
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 large sweet potatoes

    Put oven rack in middle position and preheat oven to 450°F. Generously butter a large (13- by 9- by 2-inch) shallow baking pan.
