Rice and Beans

A hearty and satisfying dish combining boil-in-bag rice with red kidney beans, sautéed with aromatic vegetables like onion, bell pepper, and garlic. This classic comfort food is both nutritious and easy to prepare.

Ingredients

  • •1 tablespoon olive oil
  • •1 medium onion
  • •1 medium green bell pepper
  • •2 cloves garlic
  • •½ teaspoon kosher salt
  • •1 box boil-in-bag rice
  • •1 can red kidney beans
  • •1 to taste black pepper

Cooking Instructions

    1. Heat the olive oil in a heavy saucepan over medium-high heat.

    2. Add the onion, bell pepper, garlic, and salt and sauté, stirring, for about 5 minutes.

    3. Pour the rice from the bag into the pan, then stir in the beans and 1 1/4 cups water. Bring to a boil.

    4. Cover, reduce heat to medium-low, and simmer until the liquid is absorbed, 10 to 15 minutes.
