- •1 small small shallot, minced
- •2 teaspoons chopped fresh sage
- •1 tablespoon minced fresh chives
- •1 teaspoon dry Sherry or brandy
- •1 teaspoon sharp hot sauce such as Tabasco
- •1 pinch Salt
- •1 pinch Freshly ground black pepper
- •6 medium medium oysters
