Grilled Fruit with Lemon Zabaglione
A delightful summer dessert featuring an assortment of grilled fruits topped with creamy lemon zabaglione and fresh mint. The fruits are brushed with an orange-brown sugar glaze that caramelizes beautifully on the grill.
Ingredients
- •⅓ cup packed brown sugar or maple syrup
- •2 whole orange juice
- •2 whole nectarines or peaches
- •3 whole plums
- •2 whole bananas
- •1 whole pineapple
- •1 portion Lemon Zabaglione
- •6 sprigs mint leaves
- •1 to taste garnish

Prepare a medium-hot fire (425° to 450°F) in a wood-fired grill.

Stir the sugar into the orange juice until dissolved. Brush the cut fruit with the sugar mixture.

Grill the fruit, cut side down, for about 5 minutes, or until the fruit is slightly soft and well marked. Move to indirect heat and continue to cook to the desired softness. Remove from the heat and set aside to cool.
