Lettuce Soup with Croutons

Ingredients

  • 1 tablespoon olive oil
  • 2 whole shallots
  • 4 cups chicken or vegetable broth
  • 1 whole russet potato
  • 2 cups rustic bread
  • 6 cups lettuce
  • ½ cup fresh leafy herbs
