Ingredients

  • 2 whole ripe Bosc or Bartlett pears
  • cup lime juice
  • cup tequila blanco
  • 2 tablespoons maple syrup
  • 2 cups Ice cubes
  • ¼ cup fresh cilantro
  • 4 dashes Cardamom bitters
  • 2 teaspoons chile powder
  • 2 teaspoons fine salt
  • 1 teaspoon lime zest
  • 1 whole lime

    Peel pears and scoop out just the seeds; the slightly harder parts of the flesh will purée well. Chop into large chunks and place in the blender.
