Grilled Giant Pork Chops with Adobo Paste

- •2 tablespoons paprika
- •1½ tablespoons dried oregano
- •1 tablespoon minced garlic
- •1½ teaspoons ground cumin
- •1½ teaspoons dried hot red-pepper flakes
- •1½ teaspoons lime zest
- •1½ teaspoons kosher salt
- •¼ teaspoon black pepper
- •4 pieces bone-in loin pork chops
- •1 piece disposable aluminum roasting pan

Prepare grill for direct-heat cooking with medium-hot charcoal.
