  • 1⅓ cups quinoa
  • 4 ounce queso fresco
  • ½ cup corn kernels
  • ¾ cup fava beans
  • 1 small onion
  • 1 whole tomato
  • 1 whole rocoto chile
  • 1 whole yellow chile
  • 1 tablespoon parsley
  • 1 tablespoon huacatay leaves
  • ¾ cup black olives
  • 4 tablespoons white wine vinegar
  • 5 tablespoons vegetable oil
  • ½ teaspoon dried oregano
