Ingredients

  • 6 Tbsp virgin coconut oil
  • 4 whole plantains
  • ¼ tsp Kosher salt
  • 3 cups plain unsweetened coconut milk yogurt
  • 2 whole ripe mangoes
  • ½ cup toasted nuts
  • ¼ cup seeds
  • ¼ cup unsweetened shredded coconut

Cooking Instructions

    Heat oil in a large nonstick skillet over medium-high. Cook plantains, turning once, until deep golden brown, about 3 minutes per side. Transfer to paper towels to drain; season with salt.
