Fresh Tomato-Olive Sauce

Ingredients

  • pounds plum tomatoes
  • 12 whole Kalamata olives
  • ½ cup extra-virgin olive oil
  • ½ cup roasted bell peppers
  • ¼ cup red onion
  • 3 cloves garlic
  • 2 tablespoons capers
  • 2 tablespoons lemon juice
  • 2 tablespoons Italian parsley
  • 1 tablespoon oregano
  • ½ teaspoon crushed red pepper

    Combine all ingredients in large bowl; sprinkle with salt and pepper. Let stand at room temperature at least 1 hour and up to 2 hours to allow flavors to blend. Season to taste with salt and pepper.
