Lemon-Caper Braised Halibut

Ingredients

  • 2 fillets halibut fillets
  • 1 to taste salt and black pepper
  • 1 teaspoon olive oil
  • cups cherry tomatoes
  • 2 tablespoons capers
  • 2 tablespoons fresh lemon juice
  • 4 cups baby spinach
  • 2 tablespoons fresh flat-leaf parsley
  • 2 slices whole-grain bread

Cooking Instructions

    Season the halibut with salt and pepper. Coat a medium nonstick skillet with cooking spray; place over medium-high heat. Add the fish; cook for 5 minutes per side, until cooked through. Transfer to a platter and cover to keep warm.
