Raw Tomato Sauce

A fresh, no-cook tomato sauce made with ripe tomatoes, garlic, and extra-virgin olive oil. Perfect for pasta or as a base for other dishes.

Ingredients

  • •1¾ lbs ripe tomatoes
  • •1½ cloves garlic
  • •½ cup passata di pomodoro
  • •5 tablespoons extra-virgin olive oil
  • •1 pinch crushed red pepper flakes
  • •to taste salt and black pepper

Cooking Instructions

  1. 1.

    Grate the fleshy sides of the tomatoes on the large holes of a box grater into a big bowl. Discard the skins. Add the garlic, passata, oil, and crushed red pepper flakes, and season to taste with salt and pepper.
