Sauerkraut with Apples

A savory-sweet German-inspired dish combining tender sauerkraut with caramelized onions and sliced apples, all braised in white wine and finished with brown sugar for perfect balance.

Ingredients

  • 1 whole onion
  • 2 tablespoons butter
  • 4 pounds sauerkraut
  • 2 whole apples
  • 1 cup white wine
  • 2 tablespoons brown sugar

Cooking Instructions

    Cook onion in butter in a 4-to 5-quart heavy pot over medium-high heat, stirring occasionally, until golden, about 6 minutes. Stir in sauerkraut, apples, and wine and bring to a simmer.

    Cover pot and reduce heat, then simmer, stirring occasionally, until sauerkraut is very tender, about 2 hours.
