Asparagus Gremolata

A bright and zesty side dish featuring crisp asparagus tossed with fresh herbs, citrus, and chile for a refreshing twist on the classic Italian gremolata.

Ingredients

  • 1 pound asparagus
  • 2 whole scallions
  • 2 strips lemon zest
  • 1 clove garlic
  • 2 tablespoons cilantro
  • 2 tablespoons rice vinegar
  • 1 teaspoon green chile
  • 1 pinch kosher salt
  • 1 pinch sugar

Cooking Instructions

    Place asparagus in a medium bowl, add ice water to cover, and swirl asparagus with your hands. Drain through a fine-mesh sieve and return asparagus to bowl. Repeat process 2 more times (this will keep asparagus crunchy). Pat dry; wipe out bowl.
