- •4 cloves garlic cloves
- •½ cup olive oil
- •½ teaspoon caraway seeds
- •½ teaspoon coriander seeds
- •½ teaspoon cumin seeds
- •¼ teaspoon black peppercorns
- •6 whole roasted red peppers
- •1 whole fresh red chile
- •1 tablespoon red wine vinegar
- •½ teaspoon sugar
- •1 to taste Kosher salt
- •1 piece spice mill

Cook garlic and oil in a small saucepan over medium until garlic is tender, 10-15 minutes. Let cool.
