- •¾ cup water
- •¾ cup sugar
- •¾ piece fresh ginger
- •¾ pound peaches
- •2 tablespoons fresh lemon juice

Simmer wine, water, sugar, and ginger, stirring occasionally, until reduced to about 3/4 cup, about 15 minutes.
