Thai Green Papaya Salad

A refreshing and authentic Thai salad featuring crisp green papaya, tomatoes, and long beans tossed in a tangy lime-fish sauce dressing. This traditional dish perfectly balances sweet, sour, salty and spicy flavors.

Ingredients

  • 5 tablespoons fresh lime juice
  • 3 tablespoons palm sugar
  • 2⅔ tablespoons fish sauce
  • 2 tablespoons dried shrimp
  • 4 cloves garlic
  • 3 whole Chinese long beans
  • 1 whole green papaya
  • 10 whole cherry tomatoes
  • 1 cup fresh cilantro
  • 2 whole green onions
  • 1 whole red Thai chile
  • 2 tablespoons salted peanuts
  • 1 piece Julienne peeler

    Whisk first 5 ingredients in medium bowl. Set dressing aside.

    Cook beans in medium saucepan of boiling salted water until crisp-tender, about 5 minutes. Rinse under cold water. Cut into 2-inch pieces. Using julienne peeler, peel enough papaya to measure 6 cups. Place in large bowl. Add tomatoes, cilantro, green onions, chile, and green beans. Pour dressing over; toss. Sprinkle peanuts over and serve.
