Quick Coq au Vin

A simplified version of the classic French dish combining chicken braised in wine with bacon, mushrooms, and vegetables. This rustic one-pot meal transforms humble ingredients into an elegant dinner.

Ingredients

  • 3 tablespoons olive oil
  • 3 slices bacon
  • 4 pounds chicken
  • 1 handful flour
  • 8 ounces mushrooms
  • 20 whole baby carrots
  • 1 clove garlic
  • 2 large sweet onions
  • 1 bottle red wine
  • 1 cup chicken broth
  • 1 leaf bay leaf
  • 2 sprigs thyme

    1. Heat the olive oil in a large pot over medium-high heat. Add the bacon and cook until crisp. Transfer to a large plate.

    2. Shake the chicken pieces with the seasoned flour in a paper or plastic bag.

    3. Brown the chicken in the pot, 4 to 5 minutes per side. Transfer to the plate with the bacon.
