Gazpacho Salsa

A vibrant Spanish-inspired salsa combining fresh tomatoes, cucumbers, bell peppers, and Kalamata olives in a smoky paprika-infused olive oil dressing. Perfect as a appetizer or condiment.

Ingredients

  • •6 tablespoons extra-virgin olive oil
  • •2 tablespoons Sherry wine vinegar
  • •3 cloves garlic
  • •1 tablespoon smoked paprika
  • •1½ teaspoons coarse kosher salt
  • •¾ teaspoon freshly ground black pepper
  • •3 medium tomatoes
  • •1 small cucumber
  • •¾ cup Kalamata olives
  • •½ whole red bell pepper
  • •½ whole yellow bell pepper
  • •½ cup red onion
  • •3 tablespoons Italian parsley

Cooking Instructions

  1. 1.

    Whisk oil, vinegar, garlic, paprika, coarse salt, and pepper in large bowl. Add all remaining ingredients and toss to coat. DO AHEAD: Can be made 1 day ahead. Cover and chill. Toss to blend before serving.
