- •2 tablespoons Sherry wine vinegar
- •3 cloves garlic
- •1 tablespoon smoked paprika
- •1½ teaspoons coarse kosher salt
- •¾ teaspoon freshly ground black pepper
- •3 medium tomatoes
- •1 small cucumber
- •¾ cup Kalamata olives
- •½ whole red bell pepper
- •½ whole yellow bell pepper
- •½ cup red onion
- •3 tablespoons Italian parsley
Cooking Instructions

Whisk oil, vinegar, garlic, paprika, coarse salt, and pepper in large bowl. Add all remaining ingredients and toss to coat. DO AHEAD: Can be made 1 day ahead. Cover and chill. Toss to blend before serving.
