Gazpacho Salsa

A vibrant Spanish-inspired salsa combining fresh tomatoes, cucumbers, bell peppers, and Kalamata olives in a smoky paprika-infused olive oil dressing. Perfect as a appetizer or condiment.

Ingredients

  • 6 tablespoons extra-virgin olive oil
  • 2 tablespoons Sherry wine vinegar
  • 3 cloves garlic
  • 1 tablespoon smoked paprika
  • teaspoons coarse kosher salt
  • ¾ teaspoon freshly ground black pepper
  • 3 medium tomatoes
  • 1 small cucumber
  • ¾ cup Kalamata olives
  • ½ whole red bell pepper
  • ½ whole yellow bell pepper
  • ½ cup red onion
  • 3 tablespoons Italian parsley

Cooking Instructions

    Whisk oil, vinegar, garlic, paprika, coarse salt, and pepper in large bowl. Add all remaining ingredients and toss to coat. DO AHEAD: Can be made 1 day ahead. Cover and chill. Toss to blend before serving.
