Pecan Waffles with Sautéed Bananas and Cinnamon Honey
Delicious grain-free pecan waffles topped with caramelized bananas and a sweet cinnamon honey drizzle. These crispy, nutty waffles are made with ground pecans instead of flour for a naturally gluten-free breakfast treat.

- •8 tablespoons unsalted butter
- •¼ cup honey
- •1½ teaspoons pure vanilla extract
- •½ teaspoon baking soda

- •3 whole bananas
- •1 cup honey

Preheat a waffle iron according to the manufacturer's directions. Preheat the oven to 200°F.

In a food processor, pulverize the pecans until finely ground. Add the eggs, butter, honey, vanilla, baking soda, and salt, and blend well.
