Oven-Roasted Plum Tomatoes

Juicy plum tomatoes roasted until slightly charred and tender, then filled with your choice of delicious toppings like ricotta, pesto, olives, mozzarella, goat cheese, or anchovies. A versatile appetizer or side dish that's both elegant and flavorful.

Ingredients

  • •1 spray Nonstick vegetable oil spray
  • •12 whole large plum tomatoes
  • •¼ cup extra-virgin olive oil
  • •1 cup ricotta cheese
  • •½ cup pesto
  • •½ cup chopped olives
  • •12 pieces small fresh mozzarella balls
  • •½ cup soft fresh goat cheese
  • •12 pieces anchovies

Cooking Instructions

  1. 1.

    Preheat oven to 400°F. Spray large rimmed baking sheet with nonstick spray. Remove seeds and juices from tomato halves. Arrange tomato halves, cut side up, on prepared sheet; sprinkle lightly with salt and pepper, then drizzle with oil. Roast tomatoes until slightly charred and tender, about 50 minutes. Cool completely on sheet. Spoon desired filling into each.
