Ingredients

  • 4 cups vegetable oil
  • ¾ cup all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon grated lemon zest
  • 1 cup whole-milk ricotta
  • 2 large eggs
  • 2 tablespoons granulated sugar
  • teaspoons pure vanilla extract
  • ¼ cup confectioners sugar
  • 1 piece deep-fat thermometer

    Meanwhile, whisk together flour, baking powder, zest, and 1/4 teaspoon salt in a bowl. Whisk together ricotta, eggs, granulated sugar, and vanilla in another bowl, then whisk in flour mixture.
