Ingredients

  • ¾ cup cake flour
  • ¾ cup white whole-wheat flour
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda

  • 4 tablespoons unsalted butter
  • ½ cup granulated sugar
  • 2 whole egg whites
  • 1 teaspoon vanilla extract

    Whisk flours, baking powder, and salt in a bowl. In another bowl, beat butter and sugar with a hand mixer until light and fluffy; add egg whites and vanilla, and beat until just combined. Gradually stir flour mixture into butter mixture until combined. Form dough into a log, wrap tightly in waxed paper and refrigerate at least 3 hours. For plain sugar cookies, heat oven to 350°F. Cut dough in half; roll out both halves to an even 1/4-inch thickness. Cut out 40 cookies using a 2-inch cutter. Coat 2 cookie sheets with cooking spray; place cookies on sheets 1 inch apart and bake until firm, 6 to 8 minutes.
