Avocado-Lime Sauce Vierge

A fresh and vibrant sauce combining creamy avocado, citrus, herbs, and olive oil. Perfect as a condiment for fish, meat, or vegetables, this sauce brings together Mexican and French influences.

Ingredients

  • ½ cup extra-virgin olive oil
  • ½ medium avocado
  • 1 whole jalapeño
  • 1 clove garlic
  • 1 teaspoon shallot
  • 2 whole limes
  • 2 tablespoons fresh basil
  • to taste salt and pepper
  • 1 tablespoon fresh cilantro

Cooking Instructions

    Combine oil, avocado, jalapeño, garlic, and shallot in a medium bowl. Squeeze limes into avocado mixture. Using a spoon, scrape pulp out of limes into mixture. Stir to combine. DO AHEAD: Sauce can be made 4 days ahead. Press a piece of plastic wrap directly onto surface of sauce. Cover and chill. Bring sauce to room temperature before continuing.
